Elaboration (vinification)
This is one of the first rosé wines from Spain made with a surprising coupage and an innovative technique in which Pinot Noir ink grape has been mixed with white grape Chardonnay. Only the first must of the pressing, the must was used, by tasting, under the press, to conserve the varietal elegance and not to cause an excessive extraction of the tannins. The musts decanted at low temperature and separately, and it was the oenologist who made the final mix, just before fermentation began at 15 °C, to fuse those exotic flavors of Chardonnay with the red fruits of the Pinot Noir, obtaining intense notes Of peach, new aromatic profiles and greater texture in mouth.
Vineyard (viticulture)
The harvest and the walks through the vineyards are constant. The heat and gradual ripening of the grapes are our inspiration and day in day out the countless samplings tell us what elements we need to make the best wines with our choicest fruit.
