Codorníu Non Plus Ultra Brut Nature Gran Reserva is a cava with an ideal profile to accompany dishes of a certain complexity: rice, fish and seafood cooked with vegetable sauces, but without much seasoning. It is also ideal for white meats or meat dishes with mild sauces.

Nose
It stands out for its intense and complex aromas: peach, redcurrant, melon, ripe fruit and aromas from aging with reminiscences of nuts, toasted bread, honey and even yeasts, which unfold with intensity on the palate.

Vineyard and processing
Elaboration (vinification)
Minimum intervention, maximum expression. Once the grapes are harvested by hand, after destemming and pressing, we obtain the exclusive musts that ferment at a temperature between 15 and 17 °C. Fermented the musts, the coupage of the resulting wines is carried out, which must be fresh enough to be gastronomic and friendly and also the structure that will allow it to continue appearing young while it gains maturity. The second fermentation takes place in our underground cellars at a constant temperature of 15-17 °C, followed by a period of aging of more than 30 months in contact with the lees of the yeasts to acquire structure, creaminess, length and aromatic complexity.
Vineyard (viticulture)
The Chardonnay comes from our own vineyard of Costers del Segre, where we work the vineyard with ecological methods and apply sustainable viticulture. The grapes come from poor soils that bring an extraordinary concentration to this expressive variety. The Pinot Noir grape comes from Conca de Barberà, from old and slate vineyards that give it an elegantly mineral profile. And the Xarel·lo grape comes from the Penedès, from old farms, whose grapes have the structure of the variety and the scent of the aromatic plants of the Mediterranean.
