Elaboration (vinification)
The Chardonnay grapes were harvested from different vineyards with different soils and exposures. The aim was to make a blend with various registers, which contribute texture, body; freshness and butterines. This separation enabled us to craft a wine with exceptional qualities whilst preserving the expression of the fruit.
The Gewürztraminer comes from a sole vineyard that was harvested over two periods: the first grapes showed greener, more vegetal characteristics, while the second batch, harvested a few days later, were riper and spicier in character.
The bunches entered the winery at nigth at low temperatures in order to preserve the varietals' aromas and avoid unwanted oxidation. They were immediately pressed, after which the most underwent natural clarification for 24-48 hours at low temperatures. Once cleared, the must was racked in a stainless tank with a cooling system where it underwent controlled fermentation at 16-18 °C. After alcoholic fermentation was completed, the various tanks were blended according to the winemaker's directions in order to create the definitive coupage, a blend of wines from different Chardonnay parcels with Gewürztraminer. This adds special characteristics to the wine without moving too far from the initial objective of maintaining the expression of fruit and freshness.
Vineyard (viticulture)
The 2018 growing season was unusually wet. The water that fell from autumn onwards nourished the vines and the plants recovered from the drought that they had been suffering. Several weeks of heat during harvest allowed the white varieties to be picked in a healthy condition and at a good level of ripeness.
