Elaboration (vinification)
This wine is an unprecedented blend in each vintage composed of 2 elements:
Wine from centenary vineyards in glass, in Tubilla del Lago (Burgos), at 930m altitude, harvested very ripe by hand. It begins with a cold pre-fermentation maceration of 1 week. The alcoholic fermentation is carried out with native yeasts in a small frustoconical deposit, making frequent manual punching. Once the alcoholic fermentation is finished and after tasting the end of the maceration, the subsequent pressing is done with a manual screw press. This wine constitutes the elegant part of the final wine.
Night teardrop wines. At the end of each harvest day, in the best deposits of each harvest that have been discovered on that day and before pressing the next day, the little wine left in the tank is allowed to drain by gravity through the pasta. To do this, a tap is left open throughout the night, collecting the resulting wine in a container. Before leaving the winery, we check that everything is fine, turn off the lights and close the cellar. The next morning the wine obtained is introduced in barrels, identifying the deposit of origin. The wine will remain in the same barrel until the end of its aging. These wines have a very high concentration, providing power to the mix.
The malolactic fermentation of these wines is carried out separately in new French oak barrels from 3 different barrels. The subsequent barrel aging lasts 24 months. Once the aging is finished, a final blend of 7 barrels is made, looking for the best expression of the Tempranillo of that vintage. It is only clarified gently before bottling. It is not bottled in all the vintages, but only in those that consider that the final wine is of exceptional quality.
Vineyard (viticulture)
The vineyard began its cycle this year with promptness, having a vertiginous cycle helped by the good hydric state of the land due to the sufficient winter rains and the high temperatures of the spring. The phenological advance was recovered by the vine finally reaching the time of veraison in less advanced dates, while the harvest was advanced to a greater extent due to the intense heats recorded during maturation. We can speak of a first vintage composed of grapes with intense ripening, to subsequently progress the general maturation of the area gradually while it was verifying the harvest, this year with more relaxation than usual due to the good weather and especially the absence of rain or frost. it has been the wines with a slightly higher alcohol content than usual, a more balanced acidity than expected in relation to the temperatures recorded, a high accumulation of color and above all great phenolic profusion, also achieving tannins of good quality, having had ripening a long duration..
