This wine pairs well with a wide range of foods such as tapas, (small calamari, squid, spicy potatoes, seafood salad, Russian salad, etc.), pastas and creamy rice dishes, white fish and seafood. It is also ideal with poultry. A white wine that can be served with the whole meal.

Pale yellow with greenish reflections that denote its youthfulness and freshness.
Nose
Very complex, notes of yellow fruit like peach and nectarine, and white, of pear and melon, are mixed with notes more citrus and tropical that add freshness. These aromas are intertwined with touches of white flowers and Mediterranean aromatic herbs.
Mouth
A fresh and young wine at the same time as structured and creamy. On the palate, the notes of yellow fruit that we found on the nose, with a fresh and citrusy finish, of lemon lime, which lasts a long time, stand out.

Vineyard and processing
Elaboration (vinification)
After the pressing, the must was cooled below 10 °C so that the static decanting was carried out, being able to preserve its primary aromas. Next, the must fermented at a controlled temperature of 16 °C for 2 or 3 weeks. The three grape varieties were fermented separately. After the fermentation and clarification processes, the final mixture was made.
Vineyard (viticulture)
The 2015 harvest can be classified as one of the best harvests in recent years at Raimat. The weather conditions were very favourable: very little rainfall, which made for a very healthy harvest, and cool temperatures at night and hot during the day: ideal for good ripening. The beginning of the cycle got off to a slower start than usual, although, with the high temperatures during spring and summer, it gradually caught up and ended up being a normal cycle. As the summer progressed and into early autumn the night temperatures dropped gradually.
This yielded grapes for white wines that were fully ripe with good aromatic intensity. Certain vineyards were previously selected for their quality potential: their balance and homogeneity. In addition to the Chardonnay, the 2015 harvest also stood out for its Xarel·lo and Albariño, the varietals this wine is made of. Some of these vineyards were harvested by zones at different times, seeking out greater aromatic profuseness and complexity, so we looked forward to very tasty and pleasant wines. An exceptional year for white wines at Raimat.
