Vineyard and processing
Elaboration (vinification)
The grapes were picked manually using boxes. At the time of harvest, we carried out a selection process to ensure that only those grapes which had ripened optimally were taken to the winery. The grapes were sorted twice, first carrying out a cluster selection and then a berry selection after destemming. For this vintage, removal of raisined berries after destemming was essential. Fermentation took place with native yeasts in open tanks, combining punch downs and pumpovers. Maceration took 21 days and fermentation took place at 26 °C in an effort to achieve a gentle extraction.
Vineyard (viticulture)
It comes from our Vicuana vineyard, located at the heart of the Haro Station District. Loamy soils, rich in limestone. Yields of 4,000 kg/ha and 40 year old grapevines. An area with a clear Atlantic influence, taking the ripening of Graciano to its limits. A wine which is only made with those harvests when Graciano achieves exceptional ripeness (2007, 2010, 2012).
