Elaboration (vinification)
The Grenache and Xenin were harvested at the same time. At the time of harvesting the Grenache was at the right point of ripeness, and the Xenin helped us to maintain acidity. On entering the winery the two varietals were pressed together and the must underwent static racking and was then poured into a cement tank where it fermented at a regulated temperature of 16-18ºC. Fermentation was commenced with local yeasts. After fermentation it was racked to remove the thick lees, leaving the fine ones. During the first two months of aging the wine was stirred once a week in the cement tank after which it was aged with the fine lees at the bottom of the cask.
Vineyard (viticulture)
It is a wine from a single vineyard, La Massipa, located right next to the vineyard of Masdeu, facing east, 650 meters high and red clay soil inlaid with plaster. The vineyard is 45 years old and is the only one with white grapes from Cellers de Scala Dei. A path divides the vineyard in half: on one side is the White Grenache and on the other the Xenin, planted by Mr. Peyra at the end of the 80s with the arrival of French varietals to Priorat. The 2015 vintage was strange, especially until shortly before the harvest. We came from one of those very promising vintages: good winter and rainy spring (without excess), but with the arrival of summer we saw at once that it would be hot. So it was. It was a very warm summer, which led to an advance in ripening, especially in the low areas. The precipitations (although scarce) of the middle of August helped the vineyards of height. So, compared to previous vintages, we are faced with wines with a little more body and greater weight of ripe fruit.
