Elaboration (vinification)
The 2018 vintage took place between October 3 and 26. The grape was destemmed and moved almost entirely to the tanks. After a pre-fermentative cold maceration of 48 hours, the alcoholic fermentation was carried out at 25 ºC in order to preserve the varietal aromas. The total duration of the maceration was 8-10 days. Then the wine spontaneously performed the malolactic fermentation in stainless steel tanks. Once finished, the wine was transferred to American oak barrels, where it was a total of 3 months. Subsequently, a slight clarification and a final filtration was carried out to refine the wine before bottling.
Vineyard (viticulture)
After the severe frosts at the end of April that caused a crop loss of 60% and the worst drought in the historical series that occurred during the 2017 season, the plants went into winter rest. The winter was, as often happens in Ribera, cold and challenging for the vine plants, reaching temperatures of up to -12 °C, continuing the low temperatures after the end of winter and during the beginning of spring with a few months of February and March pretty cold. However, finally the rain began to make its appearance in the area, and in abundant quantities, at the end of winter and during the spring. The weather changed again with a few months of May and June colder than usual. These factors influenced a certain delay in the cycle. At the end of June the temperatures became warmer and the rains finally stopped showing the stems a much faster elongation and general development, propitiating ideal conditions for a good fruit set and fruit set that already at that time augurated a wide crop despite the frosts that occurred.
Once again, the miracle has been worked in Ribera del Duero with very hot temperatures in September and high for the usual in October, we have found a rapid maturation in the case of plants that had less amount of grapes, notably the vineyards affected by frost and those of greater age, the winegrowers must later wait a little longer for the perfect maturation in the case of the plants with higher production, which was a quite common note this campaign due to the size of the berries, which It has been superior to the usual.
