Vineyard and processing
Elaboration (vinification)
Bach Viña Extrísima Tinto is known for its traditional vinification process: the must underwent prefermentative maceration followed by controlled fermentation and then malolactic fermentation.
The grapes make a small maceration of hours together with their skins in stainless steel tank and the yeasts are added quickly to carry out the fermentation. After this, it is transferred to another tank to perform the malolactic fermentation. Once finished, the wine will rest for a few months in the tank to soften the tannins.
Vineyard (viticulture)
In order to elaborate Viña Extrísimo Tinto, the vineyards are chosen following criteria of health, maturation, homogeneity and vegetative balance. To ensure that the vineyard remains active until the harvest without excessive vigor and good exposure to sunlight, but with a slight shading, we use cutting-edge agricultural practices and work together with wine to prepare each grape with its own characteristics of the wine to be made. Most of the vineyards from which the grapes are used are located in order to facilitate drainage and thus avoid excess moisture.
