One of Codorníu's most emblematic cavas, Anna de Codorníu, presents its latest novelty. It is a limited edition of its first organic cava, Brut and Reserve, which also presents a Christmas wrap that makes it the ideal gift for these holidays.
We plan the right moment to harvest each grape variety, and to avoid any contact between the organic grapes and must with the rest of our production; we decided to harvest these grapes on different days to the rest. In the winery, the material used for organic wines was separated from the rest and the fermentation casks were specially marked. Both the products used throughout the process of winemaking and the different steps carried out guarantee its certification as organic wine.
After destemming and pressing the grapes, we obtain the must, which was fermented at a temperature between 15 and 17 ºC. Once all the fermentations have taken place and the wines have been stabilised, they are blended and the resulting wine is bottled with the liqueur de tirage following the traditional method. The bottles are taken down to the underground caves (at atemperature below 15 ºC) where the second fermentation takes place followed by a period of ageing.
In total, the wine spends a minimum of 15 months in the winery, after which the remuage (decantation of the bottles to move the sediment, clumping it together and facilitating its later removal) and the disgorgement take place, the latter being the moment when the sediment deposited after the second fermentation is extracted. The liqueur d'expedition is later added, which will determine the cava's residual sugar content. Finally, the bottle is sealed with a cork.
All the vineyards that supply Anna de Codorníu Ecológico Reserva Brut have organic certification under the European ECO framework and the NOP (National Organic Program, USA). The vineyards are composed of Chardonnay (70%) and the traditional varieties Macabeo, Xarel·lo and Parellada (30%). The major component in the blend is Chardonnay, which gives the necessary mouth feel and body to make Anna de Codorníu Ecológico Reserva Brut a cava that is ideal for serving with food. The traditional varieties round out the body of this Reserve Cava and make it more robust.
The grapes used to produce Anna de Codorníu come from two very different vine-growing areas. The Chardonnay comes from vineyards that belong to the winery, located in the area with the most continental climate in the D.O. Cava - Lleida - which ensures the optimum concentration and gives freshness and greater capacity for ageing, as well as more body and greater density in the grapes. The systems of cultivation are specially focused on the production of sparkling wines. The harvest takes place towards mid-August and is always carried out at night.
The varieties Xarel·lo, Macabeo and Parellada come from vineyards selected by our viticulture and oenology teams in the Penedés area, where these varieties show all their typicality: a good level of acidity, freshness and citrus and floral aromas.
