Cava, like champagne, is a high-quality sparkling wine. Its presence at the table confers elegance and distinction, and indicates, most of all, shared happiness. Cava has had its standing recognized on account of its traditional production method, and occupies a distinguished place amongst the world’s sparkling wines.
The term sparkling refers to any wine in which the CO2 bubbles are clearly visible. Their formation is achieved by various means and this makes an important distinction between a cava or a champagne and a mere carbonated wine. Cava is produced by the traditional method with a secondary fermentation of the wine in the same bottle in which it is sold; the bubbles are formed naturally. Sparkling wines made by the traditional method produce finer, more persistent bubbles than those made by other methods, such as adding CO2 to a still wine or by other methods such as GranVas.
